Are you looking for a healthy protein packed meal idea?
Because that’s what I have to offer for you today! It’s the recipe for a
healthier Shakshouka. Shakshouka is a Middle Eastern breakfast dish but I
believe you can have this one for lunch or dinner too. It’s basically poached
eggs in a spicy tomato sauce, but we are going to buff this meal up a little, making it more nutritious and keeping you full for longer.
All you will need (for a family portion):
1 large can of
tomatoes
1 can of chickpeas
1 red pepper
2 handfuls of fresh basil
2-3cm of chili
1 garlic glove
1 onion
3-4 handfuls of fresh baby spinach
5 eggs
Salt and pepper
Spices; Chili, Cayenne pepper
Process:
Chop the onion and garlic into small pieces and heat them in
some cooking oil of your choice in a big pan. (The pan needs to fit into your
oven later on)
Pre-heat the oven to 150 degrees C.
Add the chili and chickpeas to the pan and let the chickpeas
soften a little.
Add the diced tomatoes, basil and spinach to the pan.
At this point you should add some spices of your choice, I
went for salt, pepper, chili & cayenne pepper.
Taste test! Once you like the flavours & the mixture has
had time to bubble away a little take the pan off the heat.
Make egg size holes in the mixture with the back of a spoon
and carefully crack the eggs into the mixture.
Then carefully put the pan in the oven and wait for the egg
whites to cook.
It’s best to just keep an eye on the egg whites, but this
should not take more than 10mins.
Land the pan of goodness in the middle of your table and
serve with some wholegrain bread.
This meal is full of good-for-you food plus it tastes
delicious and keeps you full for long. Give this recipe a try and let me know
