Good Morning lovelies &
Happy Easter!
During this Easter weekend we
all need a few treats, so why not throw in a few healthy ones amongst all that
chocolate too? These carrot cupcakes with a coconut frosting are delicious and
healthy – perfect for this Easter weekend or whenever you feel like it really.
So let’s get right into it!
All you will need for the cake
is:
150g wholegrain flour (flour of
your choice)
200g of pealed & grated
carrots
20g melted coconut oil
4 eggs
75g unsweetened apple sauce
2 tsp baking powder
The zest of half an orange
2 tsp vanilla extract
2 tsp cinnamon (and a little
more if you want)
70g agave syrup or honey (I used
a bit of both)
50g of chopped walnuts
All you will need for the frosting is:
250ml coconut milk
100g light cream cheese
vanilla extract
sweetener
Process
Pre-heat the oven at 180 degrees C.
First whisk the eggs and the sweetener together.
Add in the apple sauce.
Gradually add in the flour and the grated carrots.
Then add the zest of half an orange and the spices (cinnamon
& vanilla).
Add the melted coconut oil to the mixture & stir well.
Don’t forget the backing powder & finally add the chopped
walnuts to the mixture.
Distribute the mixture evenly into cupcake holders (I made
16 from this mixture) and put them in the oven for 25-30min.
In the mean time you can make the frosting.
Before you start baking make sure you put your coconut milk
in the fridge so that it is cool.
Once you have your cool coconut milk, the milk will have separated.
The more solid part at the top is the part we are going to
use for the frosting.
Combine the coconut milk fat with 100g of light cream cheese
and add in the vanilla & sweetener to your taste and mix it with a hand
mixer.
Once the cupcakes are finished and have had time to cool
down you can add the icing on top.
Now all you need to do is enjoy your healthy carrot cupcake
treats!
